At JJ Darboven, we believe that great coffee is crafted by skilled hands as much as by quality beans. That is why we established our Barista Academy, in two locations designed to inspire, educate, and elevate coffee professionals.
Our academies offer comprehensive training programs for staff at all levels, from newcomers learning the basics of espresso preparation to experienced baristas perfecting advanced brewing techniques.
Each course combines practical, hands-on experience with deep knowledge of coffee, machinery, and service, ensuring participants leave with the confidence and expertise to create outstanding coffee experiences.

Dylan Lennon
Head Barista and Master Roaster
Dylan has been with JJ Darboven for over 11 years. He is an experienced trainer and coffee roaster, responsible for developing all Eighty9 flavour profiles and conducting regular quality checks.
